Maybe the easiest way to explain what is pork belly is to explain what it is not. Pork belly does NOT come from a pig's stomach. Instead, like bacon, pork belly comes from the underbelly of the pig. Unlike bacon, pork belly is not cured. It can be cured and thinly sliced to make bacon, but when prepared as pork belly, you have an uncurred, nitrite and nitrate free protein.
But what does pork belly taste like? Pork belly is ultra-fatty, unctuous, and just plain luscious. It melts in your mouth. We smoke ours to impart an added smoky flavor to the meat that just takes the pork belly to another level. Simply put, pork belly is bacon but better.
