Well, we've been doing well - made it through the our first winter being food truckers. Sales were slow but gave us the opportunity to learn how to serve more efficiently. What we learned was tested during the last two months with terrific sales and positive feedback on our service, concept, and food. Boom!!! Just as we were hitting our stride, mechanical issues with Nina, our truck. What we thought would be a one-day fix has turned out to be the unknown - three days or a week - at the mercy of a blow torch and man's patience.
All to say, I find myself in a new mysterious place. No PREP to do. No planning the next special. No cleaning the grease trap (not complaining about that one). What to do while I wait? Oh yeah, breathe again. I choose not to be upset or mad about a situation I cannot control but to count it as a blessing. To be reminded that my plan is not the plan. That His plan is what is at work. This time will not be wasted or idle as I have plenty on the Honey-do-list, I mean, household duties.
I am filled with remorse that we could not fulfill our commitments to the wonderful establishments and neighborhoods that allowed us to partner with them. I hope those with whom we had to cancel understand that not being able to honor our commitment means more to me than lost sales.
We will be back out there soon with a renewed energy to serve the community with our gluten-free takes on some of your favorites. See you soon!
